Vineyards & Harvest
Grown in California’s abundantly rich Central Valley, this combination of predominantly
Cabernet Sauvignon and Merlot grapes provides the perfect blend of structure and
finesse.
The vines were pruned to Geneva Double Curtain to provide shade for the grape clusters.
A relatively cool summer allowed the grapes to mature on the vine through August.
The grapes were night harvested in late August and early September and brought cool
to the cellar.
Winemaking
The grapes were destemmed, crushed and fermented with pure select wine yeast in
temperature controlled fermentation tanks, then pressed at 5 degrees Brix to minimize
tannins and accentuate fruit flavors. The wine settled overnight, was drawn off
the settling lees and transferred to the cool confines of the aging cellar until
bottling.
Tasting Notes
Opulent flavors of dense, jammy fruit, decadent mocha and dark chocolate are framed
by notes of spicy black currant and rich black cherry. Hints of peppery spice and
fresh herb notes round out this velvety wine.
Food Pairing
Try it with a steak marinated in black pepper and fresh herbs, a hearty pasta primavera
or roasted red potatoes drizzled with olive oil and rosemary.
