Ideal growing conditions - long, hot, dry summers tempered by cool breezes coming off of the Sacramento River Delta – make the Lodi growing region perfect for Cabernet Sauvignon. Our California Series Cabernet Sauvignon features deep, black-fruit flavors supported by supple tannins and an elegant finish.

Proven canopy management practices were utilized throughout the growing season to optimize fruit quality. Just after bloom, leaves were selectively removed from the morning side of the vines to maximize airflow and purposefully left on the afternoon side to provide natural, necessary shade for the grape clusters. A relatively cool summer allowed for slow but steady ripening. Harvest began in late September and was complete by the second week in October.

Winemaking

Echelon Cabernet Sauvignon was fermented with select wine yeasts under controlled temperatures. One delestage (rack and return) was performed at 14 degrees Brix and regular pump-overs implemented (two times per day until conclusion of fermentation) to optimize color extraction and dark fruit flavors.

Tasting Notes

Bursting with aromas of Dutch cocoa and ripe black fruit, Echelon Cabernet Sauvignon is sumptuous with flavors of juicy blackberry and black cherry and a hint of black pepper spice. Soft tannins accentuate the deep, dark fruit flavors for a long, supple finish.
